Meatless Monday - Crockpot Rice and Beans

Easiest dinner ever. I have made this dish 100 different ways, and each time it has turned out perfectly. Here is how it happened today.

2 lbs black beans
6 cloves garlic

Rinse and sort beans. Add to crockpot and cover with water. Add garlic and cook on high until almost softened, which happens to be mid afternoon. Because black beans will turn the water - and therefore everything else - black, I dump the cooking water and replace it with fresh hot water. I also removed a few cups of beans, to save for another meal. I added:

1 onion, diced
2 cups frozen corn
2 cups brown rice
seasonings to taste- cumin, oregano, Adobo seasoning, chili powder and salt & pepper
Rinse beans and
Better Than Bouillon (any flavor)

Cook until rice is tender - which happens to be right around dinner time.



Some days I add canned tomatoes, or diced vegetables, or fresh (or frozen greens), or ... just about anything!

The leftovers will be added to broth to make a hearty black bean soup later in the week.
